ELEVEN LAYER HIGH-RISE TACO SALAD

Always a delicious recipe, but definitely better without
drywall dust!

Remember: Drywall dust does NOT add fiber!   
1 bag shredded lettuce
1 package of shredded cheddar cheese (hold 1/3 back to sprinkle on the top)
2 large tomatoes, diced
8 oz. sour cream mixed with 8 oz medium salsa
1 can black beans, drained
1 small red pepper, cut into small pieces
1 lb hamburger cooked, with taco seasoning added
1 can black olives, sliced
1/2 cup green onion, chopped

Layer lettuce at bottom of the bowl.  All other ingredients can be added in any order you choose.  Top with shredded cheese.
4 corn tortillas
Olive oil

Makes 3-4 servings

Lay tortillas on flat surface (preferably not a piece of drywall) and brush completely with olive oil.  
Turn over and brush the backs as well.  Stack tortillas and cut into quarters with a knife or pizza
cutter.  Transfer pieces to cookie sheet in a single layer.

Bake in 450 degree oven for 7-8 minutes.  Keep a close eye on your oven.......these babies tend to
burn easily!
